Less Truck Debt!!

Our regular payment to the truck loan was processed yesterday in the amount of $329.13. We paid only $13.67 in interest; $315.46 went to principal.

The principal is now under $4K, with a balance of $3,706.02. Yipee! More progress. Always makes me happy!!

On a side note, I remembered a frugal happening from last week. I used the ends of the bread to make my toast. I hate to admit I often throw these out. I have saved them in the past to make bread crumbs, but we don't really make anything that needs bread crumbs anymore. Do you eat the ends of your bread? If not, do you throw out or reuse?

    My house backs up against a golf course where wild life abounds. They regularly feast on all varieties of bread ends, sometimes even bagels Smile

    In my house, I don't eat bread, but my dh does and he even eats the heels. However, here are some ideas for what to do with the heels:

    1) crumble up and feed to the birds

    2) put in a compost bin so you can grow some great produce later this year

    3) crumble up and make croutons

    4) crumble up and put in the freezer to make stuffing later

    I eat every slice of a loaf usually - though sometimes a heel is put to use in the brown sugar container. Smile

    Usually I make my bread so the heels are coveted freshly out of the oven. When I do get store bought bread, we will use the heels in place of hotdog buns cause they sort of roll up or else freeze and use in meatloaf or stuffing.

    We save up bread heels as they are perfect for all those hearty meal 'pannini' style sandwich. Grilled cheese, Monte Cristo, Muffallatto, Croque Monsuieur etc. I've squished a bread heel in a lg. muffin tin and filled with chicken pot pie mixture for a quick fix lunch or dinner in a hurry.
