Frugal Black Beans

Black beans, or any other legume, are inexpensive and nutritious. This is my favorite black bean dish. It makes enough for two people as a meal. I'd use would double it if I were serving it as a dip.

I like to use simple recipes like this to save money, time and energy. It's nice on a hot summer day, when I don't want to turn on the oven.

1 can black beans, drain and rinsed
1/3c. chopped red onion
2 TBS chopped cilantro
1/4c. crumbled feta cheese
1 TBS olive oil
1 TBS balsamic vinegar

Mix all together. Eat plain, in a tortilla, or with tortilla chips. Yum!!
