Frugal Food Update

July 24th, 2017 at 02:25 am

From my original list I posted earlier this month these are the items I still have to use up. I do have other items in the fridge, freezer and cupboard. These are just the items I am targeting for getting used up.

1/2 pound brown rice
1/2 pounds white rice
1/2 box of unsweetened almond milk
1 can tuna
1/2 bottle of Herb & Garlic marinade
1/2 bottle of barbecue sauce
4oz of whole wheat spaghetti
1/4 bottle of poppy seed dressing
nearly full jar of tahini
chia seeds

I've been eating spinach and strawberry salads to use up the poppy seed dressing. So yummy! In fact, I ate that for breakfast today. Lunch was bean taco leftovers. Dinner was sandwiches and cantaloupe. For a snack this evening I ate three taco shells as nachos with diced peppers, green onion and cheese!

I know I can use up the almond milk with chia seeds to make some chia pudding. I will use some of the rice in dinner one night this week. We are having homemade pizza and I think I will use the barbecue sauce on it with chicken and onions.

I'm also wondering if I could use the lemon garlic marinade with vegetables? If I don't use it up by the end of the month, I'm tossing it. It actually has a lot of preservatives and junk in it that I don't really want to consume.

In other news, today was a no spend day for me. I'm pretty sure my husband bought groceries for himself. It was very hot and humid here today. I did turn up the air a bit upstairs so it wouldn't run quite so often. I also closed most of the blinds to keep the sun from heating the home.

Can you make pudding with almond milk? I tried in the past with a pudding mix and it didn't set up.

    Kudos on your creative cooking!

CB, I will be using the almond milk to make the chia pudding. Smile

Good job in using stuff up. I hate it when I realize I bought stuff with a lot of preservatives in it. Makes me kind of feel sick when I think I've been consuming it.

Do you have any chickpeas? You could make hummus. Smile

No chickpeas today, but I hope to buy some tomorrow! Hummus is really the only way I will end up using the tahini. I've never made hummus, so not sure if my blender will hold up. Eventually going to invest in a food processor.

If you have an Aldi near you, they have a decent 300W food processor - very capable of hummus. Hummus is really pretty easy - chickpeas, garlic, tahini, lemon juice, touch of salt ... and blend. You can add roasted peppers or or or ... Smile

    It's about $15 if I remember right
