Dinner For Tomorrow is Ready

November 4th, 2011 at 01:01 am

I made Apricot Chicken in the crockpot today. Unfortunately, I didn't start it until 2pm. And the chicken was frozen. So to be safe, I decided it was dinner for tomorrow instead of tonight. And that turns out to be a good thing!

Tonight we had soup and grilled cheese. Easy!

I love the crockpot. I really should find more things to make in it. What is your favorite crockpot dish?

That sound really yummySmile O.K, so this isn't the most healthy dish, but the family loves it. I put a family pack of chicken thighs in, 1 onion, 4 cloves garlic,2/3 container of bbq sauce... add 2 carrots and 2 large potatoes/diced at the last hour, about ...on high/4 hours or slow 6 hours. I put everything over rice with some salad on the sideSmile

It must be in the air- my dh forgot to start dinner in the crockpot in time. We had leftovers. Well, I didn't eat yet. Grilled cheese sounds like a good idea, for me! Big Grin

I still haven't tried the crockpot! LOL. I think we may have one somewhere, unless we got rid of it.

I put grilled cheese with canned tomato soup and salad on the menu to have something easy Monday. I got SO many compliments from the family. Big Grin It's just such a perfect autumn dinner.

This is EASY and good enough to serve to company:
Place a cheap roast in the crockpot, sprinkle onion soup mix on top, and pour a can of coke over it. Cook it on high. The meat comes out really tender because the sugar and the carbonation break it down, and the gravy is wonderful. Make rice and a salad, and you've got a delicious meal.

BTW, the coke cannot be diet.

    Please post your chicken recipe.

In the crockpot I love pot roast, chili, whole chicken and corned beef w/cabbage and carrots.

I had no idea the mention of grilled cheese would be so helpful to some of you!

Here's the link to the Apricot chicken that inspired my version: http://crockpot365.blogspot.com/2008/03/crockpot-apricot-chicken-recipe.html

I leave out the red pepper flakes and ginger. Probably because the first time I made it I didn't have those items!!

And thanks for the other recipe ideas. Always fun to share and try new things!

I do the same thing Jenn does, except I put a can of cream of mushroom soup over the roast. I also used to make a stroganoff in the crock pot but have lost the recipe. It was quite delicious though.

What's up with the grilled cheese? We had grilled cheese last night too? Hmmm--very curious.

I'm going to try some new crock pot recipes too!
